Bread is not a side dish in Arabic cooking. It is cutlery, plate and staple at once, the thing you scoop with, mop with, and tear apart to pass around. This section covers the breads worth baking rather than buying: Moroccan khobz, the round semolina loaf that turns up at nearly every meal, and manakish, the Levantine flatbread baked under a slick of za’atar and olive oil. Neither needs a stand mixer, a starter, or a pizza stone. Both want a hot oven and a little patience while the dough rises. If you have never baked bread before, khobz is the gentler place to begin.
