Breakfast

Breakfast across the Arab world is a table, not a plate. One warm dish anchors it, fava beans simmered soft or pancakes cooked on one side until the surface opens into holes, and everything else gathers around: eggs, olives, cheese, jam, bread, tea. These guides are written that way. Each gives the central recipe in full, then explains what traditionally sits beside it and how to assemble the spread without cooking six things at once. Most of the surrounding elements need no recipe at all, only arranging. Cooking for one or two? Make the anchor dish and add what is already in the fridge.
