Every food culture has a dish that signals effort, and in many Algerian homes it is this one: a golden double-crusted puff pastry pie hiding shredded cinnamon-poached chicken, spiced ground beef, and mushrooms. It arrives at the table whole, gets sliced like a celebration, and disappears like one too.
If you know the British chicken and mushroom pie, this is its North African cousin with two upgrades: a second meat in the filling, and a poaching method that seasons the chicken with cinnamon and onion from the inside while producing a small pot of golden broth as a bonus.
The best news for a home cook: store-bought puff pastry is not a cheat here, it is the tradition. Algerian markets sell the pastry ready-made, and homes build the pie around it. Fifteen minutes of pastry guilt saved before you start.

The local kitchen gave the filling its accent (cinnamon in the poach, spiced minced beef alongside the chicken) and made ready-made pastry the standard, because the filling is where a household shows its hand.
Many Algerian versions also fold in small cubes of halal chicken or turkey pâté, the mild deli block found in every North African grocery. It melts into the filling and enriches it quietly. Abroad, cubes of smoked turkey or halal deli chicken do the same job, and the pie is complete without either.
What Goes Under the Pastry
For the Filling and the Lid

Serves 6, in a 9 to 10 inch (24 cm) pie dish or tart tin
For the filling:
- 1 large chicken breast (about 12 oz / 350 g)
- 1 large onion, grated or finely chopped, divided
- 1 small cinnamon stick
- 1 tablespoon olive oil
- 1½ cups (360 ml) water
- 7 oz (200 g) ground beef
- 1 tablespoon butter
- 8 oz (225 g) mushrooms, sliced (or one 10 oz can, drained and patted dry)
- ½ teaspoon black pepper
- 1 teaspoon salt, divided
- 3½ oz (100 g) halal chicken or turkey deli block or smoked turkey, small-diced (optional)
- 2 egg yolks, divided
- 2 tablespoons chopped parsley
For the pastry:
- 2 sheets ready-rolled puff pastry (about 1 lb / 450 g total), thawed if frozen

- No chicken breast? Two boneless thighs poach even juicier in the same time, and shred beautifully.
- No ground beef? Double the mushrooms for a chicken-and-mushroom-only pie, or use ground lamb for a richer filling.
- No puff pastry? Shortcrust works and slices cleaner, though you trade the shatter. Two 9-inch rounds cover the same dish.
Filling First, Pastry Last

Step 1: Poach the Chicken with Cinnamon
In a small pot, warm the olive oil and soften half the onion for 3 minutes. Add the chicken breast, cinnamon stick, ½ teaspoon of the salt and half the pepper, turn once in the oil, then add the water. Simmer gently, covered, for 15 minutes, until just cooked through. Lift the chicken out to cool; keep the broth.
Prep tip: The cinnamon-onion poach is this pie’s signature move: it seasons the chicken to its center and leaves you a small pot of golden broth. Two spoonfuls go back into the filling, and the rest is tomorrow’s soup starter.

Step 2: Cook the Beef and Mushrooms
In a skillet, melt the butter and soften the remaining onion for 4 minutes. Add the beef with the remaining salt and pepper and cook, breaking it up, until browned. Add the mushrooms and cook until their liquid releases and then completely evaporates, about 6 minutes. The pan must end dry.
Prep tip: Mushrooms are mostly water, and water is the enemy of pastry. Cook past the wet stage until the pan sizzles quietly again, and the bottom crust will thank you.

Step 3: Build and Cool the Filling
Shred the cooled chicken finely and combine it with the beef-mushroom mixture, the diced deli cube if using, the parsley, and 2 tablespoons of the reserved broth. Taste and adjust the seasoning, then stir in one egg yolk to bind. Spread the filling on a plate and cool it completely, 20 minutes in the fridge.
Prep tip: Warm filling under puff pastry melts the butter layers before the oven can do its work, and the lid bakes dense instead of shattering. A completely cool filling is the difference between a pie and a regret.

Step 4: Assemble the Double Crust
Heat the oven to 400°F (200°C) with a baking sheet inside. Line a buttered pie dish with the first pastry sheet, letting it climb the sides. Add the cooled filling, level it, and cap with the second sheet. Press the edges together, trim, and crimp with a fork.

Step 5: Vent, Gild, and Bake
Cut three small slashes in the lid, brush all over with the second egg yolk beaten with a teaspoon of water, and bake on the hot sheet for 30 to 35 minutes, until deep golden and audibly crisp. Rest 10 minutes before slicing.
Why a Wet Filling Ruins the Lid
- The hot baking sheet is the soggy-bottom insurance. Sliding the dish onto preheated metal starts the base crisping immediately, doing the job of blind baking without the fuss.
- Yolk-only wash, deepest shine. A whole egg gilds; a yolk lacquers. The teaspoon of water keeps it brushable.
- Storage: Keeps 3 days in the fridge and reheats crisp in a 350°F oven, never the microwave. It is also excellent at room temperature, which makes it picnic and potluck royalty.
- Bake it slightly darker than instinct says. Pale puff is raw in the layers. Deep golden brown, edges nearly bronze, is where the shatter lives.

Cut the pastry into 12 squares, spoon filling onto half, cap, seal, vent, and bake 20 to 22 minutes. Lunchbox and iftar-table gold, and they freeze unbaked beautifully.
The Creamy Version
Stir 3 tablespoons of cream or a small ladle of thick béchamel into the filling instead of the broth. This steers the pie toward its French ancestor, softer and richer, and it is wonderful cold.
How I Build Mine
In my kitchen, a pinch of ras el hanout goes into the beef, the trimmed pastry scraps bake alongside as cook’s crackers, and the poaching broth reappears at dinner as a small cup of soup with a squeeze of lemon, which makes one chicken breast feel like a program of events.
What Goes Round the Pie
